It was while working in several Los Angeles kitchens that Ellen had her realization: no matter how artistically the food was plated, or how elegantly the front of house was decorated, cooks and chefs were left standing in boring white, rag-like aprons. No more, she thought. And a few patterns later, she'd arrived at the solution.
