When Katie was diagnosed with type 1 diabetes at 11-years-old, the doctor told her to substitute sugar with artificial sweeteners and buy foods marked “low sugar”—but she was not down with all the fake stuff (remove: and the carbs that came with them). She and her mom experimented with cooking with LESS sugar and all kinds of low glycemic (remove whole grain) ingredients from a very young age. As an adult, she’s found herself a whole food champion with a unique perspective—as well as quite the cook—so she decided to bring her unique low-glycemic index treats to the people. The seed and nut bars, no-grain granola and other addictive snacks are good for e’erybody, though—not just those with special diets.
