After realizing that the practice of LAW made him LESS happy, Matt decided it was time for a change. A big one. So he searched for something he could do that was the exact opposite of law (while still being legal). The answer, of course, was jerky. Handmaking jerky had been Matt's pastime since 2002, and now he had the chance to let those marinading and drying skills shine. Coming up with internationally inspired flavors of jerky, like Japanese Curry, Pho, and Sweet Sriracha, is Matt's favorite part of the process. Though we're guessing that bringing his most devoted of fans to tears ranks pretty high up there, too.
