As the best of adventures often do, Nick's began with a gift from a friendly farmer––a couple hundred pounds worth of a gift, to be precise. He gave the chef three hundred pounds of heirloom tomatoes, saying, "Do something with these!" So Nick started researching things he could whip up in epic proportions. Pasta sauce didn't quite fit the bill, but ketchup… now this had Nick intrigued. He dug up a 19th century family recipe, and got to cooking. A dash of spice (18 of 'em!) a splash of curry––he might not have amassed a collection of fifty-seven varieties just yet, but he's well on his way. < less
