That’s what Lance Gummere, chef of The Shed, would prefer; it’s been that way since he was a kid. “My mother taught me how to eat the heart when I was very little,” he says, “it’s been my favorite part of the chicken ever since.”
For the adventurous eaters among us, this bizzare offal prepared as uber-comfort food will be a favorite new dish at what might just become your new favorite restaurant. Gummere prepares it over toasted brioche with a fried egg, and claims it took an “epic level of begging their meat purveyors” to find a source to provide it. Those who understand the delicacy can certainly appreciate his efforts here.
