Owner Carlos, who hails from Monterrey, explains La Costilla's offerings as a homage to his home region of Nothern Mexico, where meaty dishes like skirt steak and baby back ribs are the cuisine's proverbial meat and potatoes. (Minus the potatoes, that is.) Think Texas-style barbecue or steakhouse, only with more spice, more sangria and a heapin' basket of handmade flour tortillas to perfectly cradle that tender, smoky parrillada regia. Nay, those who come in search of typical Tex-Mex fare won't find it here. From the fresh green chile molcajete salsa to the baked, chorizo-covered queso fundido served aflame, La Costilla sticks to the authentic recipes of the region its owner calls home. Authentic recipes which, we might add, can be enjoyed surprisingly late into the night, thanks to La Costilla's night-owl-friendly hours. If there's a better way to cap off a late night than stuffing one's face full of spicy, succulent, delicious Mexican BBQ, we haven't found it yet.
