Walt's pulled pork, brisket and ribs, smoked right outside the front door, are fall-apart tender and don't require any extra fixins—though it'd be a fool's errand to come out here without at least trying the already-famous chocolate-based sauce.This being the south, a roadside barbecue joint certainly ain't hard to find. But spotting the good ones—that's a whole 'nother battle. Conventional wisdom tells us that dirt floors and rusty pick-up trucks are telltale signs of a barbecue spot worth its salt, but us? We're inclined to follow our nose. And our trusty schnoz has led us to the big ol' smoker billowing with the scent of authentic Southern barbecue, right outside of Three Brothers.
Now, at first glance, this tucked-away little spot might not look like your typical BBQ shack. There's a conspicuous lack of wood chips on the floor, and even a touch of — dare we say it? — ambience. But don't think for a second that just because 3 Brothers isn't as "minimalist" as some roadside shacks that they lack the chops to serve up some real-deal 'cue. After spending years in the catering business (and fielding compliments left and right on his pulled pork recipe), owner Walter decided to take a leap of faith and open up a brick-and-mortar specializing in his best BBQ recipes, while also keeping things a touch classier than the standard dirt-floored shacks of yore. Nowadays, his Memphis-style pulled pork, brisket and ribs, smoked right outside the front door, are fall-apart tender and don't require a drop of sauce—though it'd be a fool's errand to come out here without at least trying Walt's already-famous chocolate-based sauce, which is already being sold by the bottle. Add to that the baked mac, oozing with three different kinds of cheese, and we're pretty sure we can count this joint as the genuine article.
