We love food served inside other food, from the commonplace hotdog in a bread bun to the monstrous holiday turducken. So imagine our delight when, somewhat accidentally, we stumbled upon the trend of pineapple boats right here in Atlanta. Pineapple boats are simply half of a cored pineapple, with some or most of the pineapple fruit scooped out, and filled with another kind of food. Most commonly, we found rice-based dishes with veggies and meat packed into the fruit vessel, whether it be influenced by Asian, Latin or Caribbean spices. And not only does it look cool (and you know it does), but the natural pineapple-y flavor and sweetness sinks into the food in the most delicious of ways.
