This unique Redondo Beach cantina was the brainchild of an Irishman who has over 20 years of experience in food and a love for things with a Southwestern flare. And there are more than 126 tequilas behind the bar, so you better get to work.
This one reads a little like a bar room joke: what do you get when you mix an Irishman, 20+ years experience with Italian cuisine, and a Redondo Beach cantina? Answer: "We like to think of this a little like the Mexican Cheers," says Matthew McQuaid, owner of Coyote Cantina in Redondo Beach. "Here, everyone knows your name." Originally from Ireland, McQuaid didn't have much of a chance to try Mexican food till he was in his early 20's. But he says it was love at first bite. "Going out to eat is my most favorite thing to do," he says, "Anytime I eat a dish I think I could add a Southwest flare to, I'll add it to the menu." His experience working with Italian food also shines through on the menu with dishes like the Pasta California, with sauteed chicken breast, roasted corn, and chili linguini.

And if the food isn't enough of a draw, maybe the 126+ tequilas behind the bar definitely will be. An avid tequila drinker, McQuaid seeks out a new tequila every couple of weeks for the regulars to try, making sure the prices don't break the bank. "I like for customers to get a chance to drink good tequila they normally wouldn't spend money on cause it's too expensive." Que benevolent.
