Not so for the Breakaway Bakery in mid-town. "When I realized I had a gluten sensitivity, I found out a lot of gluten-free food out there is pretty disappointing," says owner Janice Lavine. "I wanted to change that." And change she did.

And these recipes don't have any gums, the shortcut to wheat alternatives in the gluten free world that can often be tough to digest themselves. While the secret to all the recipes for Lavine's divine edibles is utmost measurement precision, the result is nothing short of magic. For example, for the gluten sensitives who sigh at their rice bread, conceding that "it's sort of edible if you microwave it," the bagels and other breads at this bakery are enjoyable all on their own and taste well, like bread—not like "bread." And the cookies and pastries are delicious even if you don't have any dietary restrictions. The bakery also sells pre-made, ready-to-use frozen batters and dough for muffins, cupcakes, cookies, brownies and pancakes to make at home for the g-frees or just if you like an original baked good recipe done right. Heck, sometimes a vegan gluten-free doughnut tastes better than a regular donut. Miracles are everywhere.
