Like many chefs, Tāyst owner and chef, Jeremy Barlow, always dreamed of one day owning his own restaurant—he just wanted to do things a little differently.

In case you still haven’t caught on, we’re really into supporting local businesses. In fact, about the only thing we love more than supporting independently owned businesses in our community are stories about local businesses supporting other local businesses. Oh, and stories where dreams come true. We’re a sucker for those, too, which probably explains our love for Tāyst Restaurant and Wine Bar.

Like many chefs, Tāyst owner and chef Jeremy Barlow always dreamed of one day owning his own restaurant—he just wanted to do things a little differently. Stemming from his belief in the benefits of using locally grown foods, Barlow longed to create an environmentally friendly restaurant with a menu based around foods that were both seasonally and locally available. That dream came to fruition when Tāyst Restaurant and Wine Bar opened for business in 2003 and, in 2007, became Nashville’s first restaurant to be certified ‘green’ by the Green Restaurant Association. Barlow’s farm-to-table approach to dining means that while Tāyst’s menu style is always the same, specific items are constantly changing, which we can totally get behind. We like a little mystery.
