New York City, meet the kolache, your new favorite portable food.
Described as “neat-to-eat pastries that can be stuffed with savory
ingredients or sweet house-made fillings,” the kolaches (pronounced
koh-lah-cheese) at Brooklyn Kolache Co. are the perfect treat on
the go. Historically, kolaches were a traditional wedding dessert at
Central European weddings. Today they are popular around the states,
especially in Central Texas, where Brooklyn Kolache Co. founder Autumn
Stanford hails from. Come breakfast time, kolaches are as ubiquitous
as donuts and bagels in the Lone Star state, so when Autumn noticed
them missing from Brooklyn mornings, she cooked up a plan. After a
successful Kickstarter campaign, Autumn launched her dream in March
2012 with the opening of Brooklyn Kolache Co. in Bed-Stuy.
Her take on
the Texan favorite has quickly become a neighborhood staple, from the
smoky sausage, jalapeño and cheese kolache to the delectable blueberry
and sweet cheese. Each filling comes enveloped in the cafe’s delicious
dough, which is made to be slightly chewy and a pleasant mix of salty
and sweet. (It’s also used in the cinnamon rolls and pigs in a blanket!) Besides kolaches, Autumn also offers up other Texas traditions like
breakfast tacos (try the chorizo, egg and cheese!) and refreshing cherry
limeades. Saddle up and sink your teeth into one of Autumn’s delicious
creations.
