Brunchbox’s owner, Derek, gets to work in the little food cart, flipping and grilling and seasoning. In a matter of minutes, what emerges is one mouth-stretching, eye popping creation called YouCanHasCheeseburger. It’s a hamburger patty with all the fixings between two Texas-toast grilled cheese sandwiches. Yes, you read that right. The buns are grilled cheese sandwiches. If that’s not crazy enough for you, feast your eyes and mouth upon the Redonkadonk. It is indeed redonkulous — a hamburger patty topped with American cheese, fried egg, ham, Spam and bacon, packed between, you guessed it, two Texas-toast grilled cheeses. In addition to the regulars on the menu, there’s a rotating weekly special featuring inventive burgers like The Burgermeister – two beef patties, two slices of American cheese, lettuce, grilled onion, pickles and Thousand Island on a three-piece bun.
It’s called Brunchbox because breakfast and lunch are served all day, and if you need to ease in to being awake with something a little lighter than a burger/grilled cheese combo, turn to the Black & Bleu Breakfast Sandwich — a stack of fried egg, sausage, bacon, grilled onions, blackening spice and bleu cheese on Texas toast. And if you need to run and eat, that’s fine, because everything at Brunchbox is made to go. Whether “going” is back to the office or to one of the nearby benches to munch on your meal as you watch the TriMet glide by, is up to you.
