Scout Notes: It’s nearly impossible to say enchiladas without a spicy little accent over the ladas part. And rightfully so, especially when ordering at Olivia’s, because these bad boys come packed with chicken or beef and red or green hot sauce. If playing with fire is a bit too much for you, the mole poblano is a milder meal made with owner/chef Hilario Chico’s traditional recipe that calls for chili pepper and chocolate in the mole sauce. It might sound like an odd combination until you get the first bite in your mouth, and then it makes more sense than 2+2=4. Wash everything down with a big glass of Olivia’s sangria, or a cup of creamy horchata if you’re having more of a PG-13 night.
