Fuel Cafe is housed inside the Equinox gym, which is inside the Pacific Stock Exchange Building at Pine and Sansome. I’m not 100% sure I’m in the right place until I open the door and the sounds of weights clanking together fills the air. As a registered trainer, Corey knows what does a body good when it comes to nutrition. His entire menu is designed with the highest of health standards in mind. His menu features choices that are minimally processed, as Corey puts it, he likes to stick to 2-3 steps in his food preparation. My Salmon Monster Burrito is the perfect example of his mantra. A giant spinach tortilla is filled with sustainably raised salmon from Royal Hawaiian Seafood, brown rice, avocado, black beans, fresh tomato pico de gallo, spinach, melted pepperjack cheese and cilantro lime sauce. My Spirulina Super Food Smoothie is a well-blended mix of Spirulina, an algae that’s an excellent source of protein, almond milk, dates, blueberries, banana and Brazil nuts. As if all this fresh, carefully calculated food isn’t the boost I need to get me going, Corey treats me to an Anti-Oxidant Bar made with organic Medjool dates, organic dark cacao, Brazil nuts, dried blueberries, cherries and strawberries. It’s one of those treats that effectively teaches people good-for-you-food can taste good too!
Normally, I wouldn’t want to sit down and eat while watching the people around me get fit, but Corey is right, this food fires me up to get out there and get moving! I’ll start with the 5 pounders and go from there...
