If something smells fishy in Dupont, there's a good chance you're in the vicinity of OhFish!, the new sister restaurant of KAZ Sushi Bistro, and operated by Chef Kazuhiro "Kaz" Okochi. So, what's different about OhFish!? While it looks like we just shouted that question due to the coincidental punctuation, we're actually very calm, maybe even Zen-like over here because we have an answer. I sat down recently with Chef Kazuhiro "Kaz" Okochi to talk about his latest venture OhFish! in Dupont Circle. Unlike his signature restaurant, KAZ Sushi Bistro, which is known for its creative sushi that is best savored, OhFish! offers futomaki for people on the go.
In his home country of Japan, Kaz explains that futomaki ("large rolls") are made at home as a quick and easy meal.
So after visiting a Subway sandwich shop, he got the idea of maki rolls made in a similar assembly line fashion for lunch. "it's a trend for people to eat more casually," he says.
